  1. Preheat the oven to 190°C (375°F).
  2. Carefully slice a pocket in each chicken breast and season with salt and pepper.
  3. In a bowl, mix together Cabrales, spinach, sun-dried tomatoes, and garlic.
  4. Stuff each chicken breast with the mixture, securing with toothpicks if necessary.
  5. Heat olive oil in an ovenproof skillet and sear the stuffed chicken breasts for 3 minutes on each side until browned.
  6. Transfer the skillet to the oven and bake for 20–25 minutes until the chicken is cooked through.
  7. Remove toothpicks, slice, and serve.
