Idiazabal Croquettes with Herbed Aioli

Savory croquettes made from mashed potatoes enriched with Idiazabal, lightly breaded and fried to a golden crisp, served with a homemade herbed aioli. 

Method
 

  1. Mix the mashed potatoes with grated Idiazabal, egg, flour, salt, and pepper until well combined.
  2. Form the mixture into small croquettes and roll in breadcrumbs.
  3. Heat oil in a deep pan and fry the croquettes until golden and crisp. Drain on paper towels.
  4. For the aioli, combine mayonnaise, garlic, lemon juice, and parsley; season and stir well.
  5. Serve croquettes hot with a side of herbed aioli.
