Idiazabal Stuffed Mushrooms with Chorizo & Herbs

Earthy mushroom caps are filled with a savory mixture of finely chopped chorizo, garlic, fresh herbs, and melted Idiazabal, then baked until golden.

Method
 

  1. Preheat the oven to 190°C (375°F).
  2. In a skillet, heat olive oil and sauté shallots and garlic until soft. Add diced chorizo and cook briefly.
  3. Remove from heat and stir in half the grated Idiazabal and parsley.
  4. Stuff each mushroom cap with the mixture and top with remaining cheese.
  5. Bake for 15 minutes until mushrooms are tender and the cheese is melted and bubbly.
  6. Serve warm.

The savory chorizo and herbs enhance the smoky, nutty flavor of Idiazabal, while the mushrooms provide a perfect, bite-sized vessel.
